White Bean Chicken Chili Instant Pot

Easy to make! Quick to put together and ready in under an hour!


1 T. olive oil

3 Boneless Chicken Breasts

1 Large onion

2 14.5 ounce cans chicken broth

2 cloves minced garlic

2 16 oz cans diced tomatoes

1 can cannelli beans

1 can pinto beans

2 cups of fresh corn

1 18.75 oz jar of tomatillo salsa

1 t. cumin

1 t. Italian seasoning

pinch of salt and black pepper to taste


Saute chicken breasts in 1 Tablespoon of olive oil. Saute all sides.

Add remaining ingredients.

Seal Instant Pot and use Chili setting to cook.

Manual release pressure.

Remove chicken and use a fork to shred.

Add back into Instant Pot.
