Pumpkin Steel Cut Oats InstantPot

Yummy breakfast or lunch on a cold fall/winter day. Super easy in the IP as well. And way quicker than on the stove.

2 c. water

1 c. oat milk

1 c. steel cut oats

1/2 c. canned pumpkin

2-3 T. maple syrup

1/4 t. salt or to taste

1 t. vanilla

1/2 t. cinnamon

1/2 t. nutmeg

Put all ingredients together and put on saute mode for 10 minutes. Place lid on and cook on manual high pressure for 4 minutes. You can either natural release or if you don’t mind a little less mushy, manual release, stir and eat.

I put this in glass containers that are serving size. Add a little more milk to reheat and microwave until warm. You can add nuts or dried fruit for more flavor.
